Traditional Mooncake. 1st attempt. Single yolk, lotus paste and melon seeds fillings. I watched so many Youtube videos and studied many recipes to see which works. Because this was my 1st attempt, the dough vs fillings ratio I did was 3:7 I miscalculated. The mold I used should be 150gram capacity but I calculated based on 100grams so it's a bit on the thin side Otherwise, I am happy with the results. Dinner at work is Asam Pedas and White rice. Elb edition. ELB is very convenient if you plan ahead. The next time you cook assam pedas at home, before you add the fish and tamarind juice, set aside the paste and freeze a small portion. On yr next Elb adventure, just need to add yr paste, tamarind juice and seasoning if your paste is unseasoned, add fish and let it steam for 30mins or so.
