Busy day and since I'm cooking for one, today's meal cooked using ELB. Steamed Golden Pomfret recipe as below. Lined the base with sliced ginger, garlic, green onions, Coriander leaf roots, mushroom, tomatoes. Season fish with a lil salt. Pour the grave which consist of a dash of chicken stock, oyster sauce, water, sugar, lime juice a some water. Add sesame oil n light soy sauce or fish sauce if you can take that. One week marketing. I shopped like want to feed army today. Cannot help it la all I want and of all day, today I went marketing alone. I bought 3 Red Snapper + 2 Siakap from our number 1 fishmonger here. Cost me $29 for both. A bit pricey compared to the rest but we like him. I bought 1kg Ikan Terubuk = $14 from this Malay couple featured in Berita Harian I bought 3 ikan sembilang + Sotong from another younger Malay couple. Cost me $11 or $12 in total. I bought Big size Ikan Debam or Rabbit Fish from another preferred fishmonger $4. I bought one only because I think my Mr and FIL didnt eat that fish I bought Ikan pari or Stingray + Tenggiri fish egg $2. Total around $7. Pide for Sunday Brunch This is not in my weekend long list of project but it just happened lol. I prepared the dough last week and totally forgot about it. By the time I remember today, the dough has a nice sourish smell which should yield nice taste. For today's Pide, I spread a layer of finely chopped tomatoes, capsicum, onions, garlic. Followed by mince meat that I marinated and pan fried with spices. Baked and once out, break an egg, brush the sides with ghee and top with coriander. I baked it on baking stone today. So happy with the overall result. Hainanese Chicken Rice. Weekend Project at work. We tried using Woh Hup chicken rice paste and Steamboat pot. Team bonding, team engagement. All chip in from cooking of the rice to the servings and cleaning up. We cooked the chicken in the pot, remove chicken, add the rice to the reserved stock. We used store bought chicken rice chilli sauce. For the black sauce, I mixed some oyster sauce with chicken stock. sesame oil and light soy sauce. Too bad I cannot eat or taste due to the sesame oil. But based on feedback next time use more paste, more chicken, add more oil to the rice, add more coriander leaves and cook rice with the roots. Someone suggested add a bit sugar to the rice. Maybe I add a bit sugar to the sauce instead. Sugarless Kopitiam Bread. Chef Alex Goh Overnight Sponge Dough + Overnight Cooked Dough. This was after I trimmed the crust. I don't have the correct size bread loaf pan so the bread was kinda out of shape hehehe. After trying many recipes, I have this current preference for overnight dough. I find this method yield better texture and taste and remains soft longer without the use of additional chemicals. No doubt I cannot use this method if I have sudden cravings for rolls but with planning, It is doable. This recipe is not the Kopitiam White Bread recipe Im looking for but I still like the taste. It goes very well freshly toasted and spread with nyonya kaya and salted butter. I sure hope FIL like it cos he finished half loaf. Fresh Fettuccine Aglio Olio with Mushroom. A bit upsetting actually. I made fresh pasta earlier because I wanted to eat pasta in creamy mushroom sauce. Much to my annoyance, the 3/4 full box of cream was missing from the fridge and I only realised that when I have already started sautรฉing the garlic and mushroom in olive oil. So Aglio is is then. In tune to tekak melayu, added cili padi too. Finish it off with Parmesan. Light and fast.. Yum But but but I'm still thinking of creamy mushroom sauce hahah Fortunately I made a few servings of pasta for keeping. Breaded Mushroom. Earlier, while waiting for dough to rise, I fried some mushrooms. Just a simple runny batter of a part flour + a part water and egg. I added black pepper, chopped green onions and birds eye chilli. Dip mushroom in batter, let it drip, cover with Panko breadcrumbs and deep fry. Rolls rolls and rolls. All ugly and not pic worthy hur hur hur.. That's Kaya Rolls, Cinnamon Rolls with Streusel Topping, Sugar Rolls, Sausage n Cheese Rolls and Chocolate Rolls. Today I did not use the usual sweet dough recipe I'm used to. Today I tried gelatinised dough method which is basically scalding a portion of flour with boiling water, mix until it become rough dough and rest 12hrs. After that, prepare the rest of the dough, yeast all that as usual bread and mix with rested dough. Proof and shape. I read that the end result will be very soft bread. This book my dear friends is a keeper. Mr told me about this book by Christopher Tan. So since it's rare for Mr to recommend cooking book to me, I logged online and placed reservation for this. No regrets... A gem. Reading just the first few pages is enough to engage me. It is filled with great unique recipes which are easy to follow, useful need to know pointers and detailed instructions. Yuzu Buttercake - Chef Zan recipe This recipe is simple and fuss free, perfect for quick bake session or late night bake without waking up my downstairs neighbour ๐ The recipe did not call for Yuzu Concentrate but I have a jar of Yuzu so I added 1 teaspoon to the batter as well. The end result is a moist dense and rich buttercake with a hint of Yuzu. Even with the addition of Yuzu, concentrate, I still find the Yuzu mild. Next time, I'll try add 2 teaspoon concentrate for a stronger taste. Psstt : If you have tried Sicilian Orange Butter cake then you'll love this. The recipe ratio is also somewhat similar.. Assam pedas night. Overloaded with veg version. I added curry leaves too today because Mr was pruning the plant earlier. Mini Spring Roll filled with scramble eggs with onions, spring onions and bird's eye chili. Because my freezer totally out of emergency meal. Need to stock up. Epok-Epok Sardin for afternoon tea There was a recent discussion about Epok Epok Sardin on a particular facebook group and all that postings is making me craving for one. So this is my weekend project this week. I am quite particular with epok2. What I like is epok2 with thin crispy skin unlike OCK and with skin that still taste ok a few hours after oil bath. I tried a few recipes. Some recipes call for margarine, some using ghee. Some just oil. Among the recipes I tried. This recipe work best for me. Fresh Fettuccine with Swedish Meatball and Sour Cream Sauce Experimenting with Fresh Pasta. I'm a happy girl. Totally worth all the kneading and rolling. I made enough for one servings. 1 egg yolk, pinch of salt pepper and olive oil with 1 cup of flour. Knead, rest and roll. I watched many videos online before attempting this. I learned that If I want al dante pasta then I should not cook it more than 90secs. So happy with the outcome. For the meatball, I am out of breadcrumbs so I blitz 2cream crackers for the breadcrumbs. For the sauce, in my freezer I only have left over chicken stock so I used that instead. I'm also out of cream so I used Sour cream instead. Still yummy. Dinner is Terubuk Bakar With condiments and Egg Drop and Ketola Soup I blended garlic with oil. Marinate the fish, wrapped in foil and place in chiller. Oven baked at 200 Deg C for 30 to 40 mins covered. Uncovered and bake another 10 to 20 mins at 220 Deg C. Tau Huay. Throughout 18 years of marriage. This was my 2nd time making Tau Huey. I followed late MIL recipe with good result previously but as you can see the paper is torn beyond repair. I can only roughly guess the steps through the somewhat hazy memories and through online resources. The only changes I did back then was to switch Gypsum to GDL (Lactone) because Gypsum is not good for health in big quantity but the truth is I cannot find it anywhere near Woodlands. You can get GDL from anybake shop and the Gypsum from singseh. We are sorry that we were unable to reply to each individual message and personally thank each of you who took the trouble to come down despite your busy schedule to offer prayers and contributions.
Your presence means a lot to all of us.
Looking back on the past wonderful memories with nenek, the one on repeat mode revolves mostly around food especially during the time period where we stayed with nenek at tampines block 266.
We don't have that much money then but we always had enough to eat because nenek was resourceful and fed us well with love.
I remembered her nasi lemak, which was unlike the one's sold in shops. If I'm not mistaken, her sambal was a watery kind. I neither like nor dislike it but If I am to try in recreating the taste, I don't think I can do it as well as hers.
I remembered learning on how to pull the dough for prata by stretching it on the back of big round serving (enamelled) tray, (just like Mr late grandpa used to do to) but I had forgotten what were added in as ingredients to the dough. Melted ghee, warm water and salt? Maybe. Must ask my mom or father in law (who used to work with Mr late grandpa selling prata that his family still raves about when reminiscing).
I remember the times she sat snipping bags of dried chillies while watching news or whatever P Ramlee or Hindustan or video Omputeh atuk fancies at that particular time, on repeat mode. Because we were staying with the grandparents, we received regular visitors and nenek usually cooked invbig pots and we can use up 2 big red plastic bag of dried chillies real fast because asam pedas and sambal tumis was always on the menu.
I remember how early she woke up every morning to also cook 'bekal' for working adults in the family. The most common bekal will be ayam masak kicap. Her ayam kicap for bekal will always be chicken wings and she does not pre-fried the wings. I remember the gravy was watery with tinge of vinegar and not the typical dark gravy. Not the way I would cook now but something which I enjoyed eating back then because it taste so simple and comforting at the same time.
I remember there was always something daily on the dining table for afternoon tea. Interesting traditional kuehs the teenager food snob me back then don't care much but the now me turned to Google and Youtube for recipes.
I remember jemput2 ikan bilis basah. 'White Bait Fritters'.

Nenek recipe on the other hand was a simple no frill batter. Into the big basin of batter she would add thinly sliced tumeric leaves, tumeric powder and If I'm not mistaken, some blended dried chillies instead of sliced chillies. The sliced tumeric leaves gives a really nice bite to it. I remember I don't really like white bait because I remember biting on lots of baby bones so I always pick them out. Maybe If the fritters was abit tad crispy, I would love it.
Sometimes she replaced the white bait with udang geragau (Dried Baby Shrimp). I loved this version better but sadly I can no longer eat prawns now.
I remember Lempeng Kelapa. Have you tried that before? It is actually a traditional pancake made with flour and grated coconut. You can have it as it is or dipped in left over sambal from breakfast. The last time I had that was when we were still staying with granny. Wow that must have been close to 30 years ago. I don't think we will be trying to make this. I doubt Mr like the idea of grated coconut pancake ๐

I remember Roti Jeneket which taste very much like Butterfly Bun without the sesame toppings. Her's was a simple recipe without use of yeast. Her's doesn't stay crispy when cold so we always grab when it's still hot. I have been wanting to make Roti Jeneket for the longest time. I studied so many recipes online and bookmarked some from popular food bloggers. I really should zoom in to one recipe and try. Of all the food memories, the one I missed the most is Murtabak Udang Kering dan Lada hitam. (Dried Shrimp and Black Pepper Murtabak). You prepare this as per usual murtabak but instead of minced meat you add blended dried shrimps and black pepper to the egg and onions mixture. Mak still made this many years back but since now I'm allergic to shrimp, this shall be one food I will forever yearned for but whose craving will never be satisfied alas.
What was supposed to be a note thanking each one of you for your thoughts and kindness has now turned into a post reminiscing about the past and food (Mr also complaining suddenly how come sunday brunch is not prepared yet after editting this post)
