Ikan Siakap Bakar Sambal Grilled Sambal Seabass . Recipe below. . I tweaked the recipe I’ve been using for years to exclude dried shrimps and belacan. If you are not allergic to crustaceans do not skip. Big difference in taste . For the paste: 1 handful dried chilies, deseeded, soak in hot water 1 handful shallots (bawang kecil) i added about 20. 1 small knob belacan (about 20 cents size) 1 spoon dried shrimps soak Blend all above. Salt and A teaspoon of sugar. I did not add at times 1 big onion - slice Lime Fish Either Seabass or stingray Clean the usual way with asam or salt or just water will do. Be sure to slice lengthwise for even cooking. Optional Corriander leaf (daun ketumbar) Banana leaf - try to use this. Cut to size, rinse and wipe dry. 1) Heat oil and fry the paste in medium heat till fragrant and oil separate. . After 10mins or so add the sliced onions. . Continue fry. I usually fry long. Just make sure the paste don't burn . 2) taste and add seasoning. The sambal usually I made it a tad salty because I did not salt the fish. . 3) heat up yr skillet or griddle or frying pan. Add about a tablespoon of oil. Place your banana leaf. Let it wilt. (If banana leaf is too small it's ok just use a few pieces overlapping each other) . 4) add a small amt of sambal on banana leaf. I usually add the sambal oil as well so that the fish will not stick to it. Spread. . 5) Place fish on sambal, add more sambal over fish, cover and cook for 10 to 15 mins. . 7) remove cover. It will be watery due to the steam. . Cook uncover on high heat till you see slight char at sides. . Becareful. If your banana leaf is bigger than pan, it may catch fire so make sure you don't cut it too big. . It will get smoky. Make sure your smoke detector off and make sure you don’t have laundry at yr service balcony. . Banana leaf will be charred a bit but its ok cos it add some smoky smell and taste to the dish. . 8) remove and serve with lime, corriander leaf and hot white rice .
