Experimenting with Electric Lunch Box. I have no idea how this will turns out. What I'm attempting today is Brown Rice Pilaf and Butter Chicken. I think the idea of using ELB is minimal preparation as well easy to execute at work so you can just need to place all ingredients in, turn it on and ready to eat at lunch break. So what I'm trying to achieve today is that and which I think I fail because quite a bit of prep involved plus this is not exactly healthy. Fried Brown Rice for breakfast. So late last night after I finished cooking Pasta, I found that my brother cooked one pot of brown rice. Rather then let it go waste, I fried rice this morning for breakfast. This was my first time trying fried brown rice. Hungry at this hour. Quick pasta not from scratch. I used canned Prego Pasta sauce. Heat up EVOO, add chopped onions, garlic, minced meat, bay leaf, paprika, fresh thyme. It's a must for me to brew hot tea almost every night. I will pour it into a thermos flask and this will accompany me while watching tv, do some reading, drama time before bed time. I do the same when on holiday too. Tonight's choosen brew is Rose with French Vanilla. I alternates between Dilmah Rose with French Vanilla, blueberry tea and BOH tea Lychee tea.., Twinnings Earl Grey or Cammomile and Ahmad Brand Vanilla Black Tea. Been wanting to try Chef Alex Goh bread recipe for ages. I got his basic sweet dough recipe online. Just google for Chef Alex Goh sweet Dough. Part of it I filled it with scrambled egg and the balance sprinkled with sugar and brushed with butter only because I'm out of cheddar cheese. Chicken Porridge cooked using Electric Lunch Box. I can use rice cooker but I'd like to experiment using ELB for future reference. Cheat night because I'm using premix Chicken Rice Paste. Prep time 5 mins. Cooking time 1hr 15mins. Ingredients 1 part Rice, 8 parts water or homemade stock if you have 1.5tbsp of chicken rice mix. One carrot chopped in chunks chicken pieces pinch of salt. Optional condiments - cili padi, spring onion, fried shallots, dash of sesame oil or soy sauce. I did not add all the water first as I'm worried it will overflow. So I added 6 parts first and the other 2 parts about 6 mins before end cooking. Kare Raisu and rice cooked entirely using Electric Lunch Box. Today I am still nursing fever. Strangely I have this craving for Japanese Curry. I can't think of better way to next experiment what electric lunch box can do next. So Kare Raisu for lunch. Minimum prep just need to cut potatoes, carrot, chicken pieces and green onions. Put all in the pot add one cup of hotwater and 2 small block of Roux, mix to melt the roux abit and turn it back on. While its cooking I manage to catch a short nap. Cooking time is 1hr. Project 'Apam Balik' I watched a lot of YouTube and read alot of recipes to make this. I learnt there are 2 kinds. First the thick types which you need to add yeast and the other thin crispy kind without yeast. I learnt if you want the honeycomb texture then I should try the one with yeast. Bento for today's lunch. I cooked the Kare yesterday's night and the rest this morning. Somehow this batch doesn't look appetising at all when cold and it looked very oily. I drained the oil after this shot and blot as much I could with paper towel. Heated this up in office pantry microwave.. Yum Happy meal... Packing Bento is so much fun but I spent a bit longer than usual nasi bungkus and Im sure Mr was annoyed this morning 😜. Paella I bought a small 3oz can of Paprika and I have a box of shortgrain rice which I need to finish soon. I am forever scrimping the saffron and paprika. Should always remember to add more next time. Added chicken pieces, fish fillet, squid rings and prawns. Stock used is chicken stock. I added fresh tomatoes instead of can tomatoes. Busy week. I still cook but I am in no mood to take nice pictures. Made this Ondeh Ondeh last Sunday. Colour was pale because I used actual pandan juice squeeze from 10 pandan leaves. Not my first time following this recipe but somehow this batch doesn't taste nice when cold. Mr Hubby thinks so too. Wonder what went wrong. The only changes I made was to use another brand glutinous flour. Could it be due to that or did I messed up somewhere? Anyway i've been thinking about the whysss since last Sunday..
